OUR WINES

We produce two exclusive wines from grapes brought in from outside vineyards. Both showcase the unique characteristics of each site and variety and our commitment to the individuality of single vineyard wines:

cascabel riesling
  Our Riesling is bone dry, without acid adjustments. It has a mineral and steely character and has excellent ageing potential.

The grapes are from a 45+ year old vineyard, dry grown, in the heart of Eden Valley, one of Australia’s best regions for this variety.

cascabel shiraz
  The grapes for our Shiraz are from a vineyard at the southern end of the Fleurieu Peninsula.

Fruit from this vineyard, close to the Southern Ocean, suffers less from the degree of heat that affects many other regions in summer.

It produces wine with pronounced varietal characters, flavour and balance, rather than simple, overripe flavours.

To make Klassisch (classic in German), a sweet and luscious wine, we use grapes from the same mature, dry grown vineyard in the high Eden Valley that has been providing us the grapes for our dry Riesling since we first started in 1998.

Wines from grapes grown in vineyards at our own McLaren Vale Estate:

cascabel tipico
  Tipico is a blend of three varieties historically grown in the McLaren Vale area: Grenache, Monastrell (locally known as Mataro) and Shiraz.

Monastrell and Grenache provide the essence, with Shiraz complementing the aroma and tannin of this very Typical and traditional McLaren Vale wine.

cascabel roussanne viognier
  The intention behind blending the white Rhone varieties in our Roussanne/Viognier is to combine the fresh and elegant structure of Roussanne with the essence of Viognier, and its delightful peach and quince highlights.

cascabel tempranillo
  We make a Tempranillo released after only 3 months in barrel. This wine style is well regarded in Spain where it is similarly released soon after vintage.

It has plenty of fresh and vibrant tasty tannins and the strawberry/raspberry character shows at its best.

We also produce two flagship wines from our vineyard in tiny amounts. Our aim is to achieve greater length and ageing potential:

cascabel monastrell
  Our Monastrell (originally from Spain and also known as Mataro in Australia or Mourvèdre in France) has great richness and shows plenty of spicy, concentrated fruit.

  The Tempranillo/Graciano is more perfumed and savoury and is balanced with well structured tannins.

Both wines display intense flavours and fragrance while retaining the savoury and fine grained tannins from these classic Spanish varieties, so well adapted to our conditions.

  El Sendero (the path, in Spanish) is a wine made with the Tempranillo grapes that grow along our garden path and display very distinctive varietal characters.

Rich textured with concentrated flavours, rounded body, firm tannins and suited to medium to long-term ageing.
